Apple Spice Cake with Cream Cheese and Apple Filling

Filling – blend together
8 oz. softened cream cheese
1 ½ cup powdered sugar
2 Tbls. milk

Apples – cook over low heat until apples are tender
3 cup chopped apples
4 Tbls. butter
4 Tbls. brown sugar
1 tsp. cinnamon

2 ¼ cup flour
1 ½ tsp. baking powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. allspice
½ tsp. salt
¾ cup butter
1 cup brown sugar
½ cup granulated sugar
3 large eggs
2 tsp. vanilla
1 cup milk
2 medium apples, chopped

Whisk dry ingredients together. Beat butter, brown sugar and sugar until light and fluffy. Add eggs one at a time. Mix in vanilla. Add flour in 3 portions and milk in 2 portions to the butter mixture. Mix just until combined. Stir in apples.

Pour in 2 greased round pans. Bake at 350 degrees for 25-30 minutes.

Apple Cider Frosting – Blend butter and cider. Add sugar 1 cup at a time. Add spice. Stir.
4 cups powdered sugar
½ tsp. pumpkin pie spice
¼ cup apple cider
½ cup butter, softened
