Apple Orchard Chicken Salad – 2012 Grand Prize Winner

Apple Orchard Chicken Salad
1 boneless skinless chicken breast, cooked
2 green onions
1 large pink lady apple, chopped
¼-1/2 cup mayonnaise (depending on your taste)
3-4 Tbls. Dijon mustard (depending on your taste)
Pinch of salt
¼ cup chopped pecans (optional)
Grind together chicken and onions in blender or food processor. In bowl, mix together apple, mayonnaise, mustard, salt, and pecans. Add chicken mixture and stir until well blended. Serve with crackers, on sandwiches, or just eat it plain!
