Rusty’s Apple Dip – 2011 Grand Prize

Rusty’s Apple Dip
1 medium Granny Smith apple
1 Red Delicious apple
1 Golden Delicious apple
1 cup of strawberries
½ cup dried blueberries
2 kiwi, peeled and diced
1 tablespoon of orange juice
3 tablespoons of packed brown sugar
2 tablespoons of apple jelly
Chop the apples, kiwi and strawberries into small pieces and place in a mixing bowl, add the dried blueberries and then the orange juice stirred into the mixture. This will prevent the fruit from turning and start the blueberries to re-plump. Mix the brown sugar into a separate bowl with the apple jelly until smooth. Stir the brown sugar, jelly mixture into the bowl of fruit until covered well and refrigerate until ready to serve.
For dipping: Preheat oven to 350 degrees. Slice flour tortilla to the desired size you want. Spray a cookie sheet, place sliced tortillas on the sheet, sprinkle with water and any spice you like such as cinnamon sugar, apple pie spice, nutmeg, etc. and then back for about 10 minutes until crisp. Allow to cool and use these to dip in Rusty’s Apple Dip.
