Crunchy Apple-Chicken Salad

5 scallions, white and green parts removed, or green onions, finely chopped
2 Granny Smith or other firm, tart apple, peeled, cored and thinly sliced into lemon juice water, then drained
2 cups cooked brown rice
3 pounds roasted chicken, roughly chopped
1 cup toasted pine nuts or almonds
3 tablespoons fresh lemon juice
4 tablespoons extra-virgin olive oil
1/3 cup flat leaf parsley
Kosher or sea salt and freshly ground black pepper

In a larger mixing bowl, combine ingredients and toss well to coat. Season with salt and pepper to taste.

Note: this salad has no mayonnaise so it would be great for a picnic and can be served as a salad on its own, in lettuce cups, wraps, pitas or on a croissant.
